A special birthday calls for a special cake. When my friend Bill asked me to make the cake for his 50th birthday party I made a cake version of a chocolate covered cherry.
The cake itself is a light as air chocolate genoise that has been moistened with Kirsch and simple syrup. Whipped chocolate ganache studded with brandied cherries separates the layers of cake. More whipped ganache and chocolate flakes top the cake off. More cherries accent the piped rosettes.
